Callisen is bar manager at London’s private members club, Century, which boasts three Hoshizaki ice machines.
“The ice is fantastic,” explains Jesper. “It cools without diluting as the cubes are extremely solid and pure. A bartender puts effort into making a drink and wants the customer to appreciate the flavours in their entirety – not a watered down version.”
Jesper Callisen will be serving cocktails throughout the exhibition which takes place at London’s Excel from April 28 to May 1.
